前言 Foreword

民以食为天,粮食短缺会影响国家命运;饮食习惯与健康密切相关;而随着全球气候变化成为当今的热议话题,人们开始意识到个人的饮食习惯会对环境造成影响;饮食还涉及到食物伦理、食品安全、社会经济、动物福利等多方面的问题。

Hunger breeds discontentment and food shortage will affect the country’s destiny; eating habits are closely related to health; and as global climate-change becomes a hot topic today, people begin to realize that personal eating habits will affect the environment; eating habits are related to food ethics, food safety, social economy, animal welfare and many other issues.

中国拥有全世界20%的人口,中国人的行为习惯在国际上有举足轻重的地位;中国幅员辽阔,受不同地区经济水平,文化特征等因素的影响,不同地区有着不同的生产水平和消费习惯。让人们,尤其是需要大量参考数据的政策制定者,全方位地了解自己的食物体系是非常必要的。

With 20% of the world’s population, the behavioral habits of Chinese people play an important role in the global area. China has a vast territory, because of different economic level and cultural characteristics, different areas have different production capacity and consumption habits. It is necessary to inform people, policy makers in particular, about their food system.

本研究着重于中国动物性食品的生产与消费,利用FAO数据库中与畜牧业和渔业相关的数据,以及国家统计年鉴中与畜牧业生产和人民消费水平相关的数据,对其进行可视化,旨在描述以下问题:中国的动物性食品的生产和消费水平处于怎样的国际地位,消费水平与营养需求是否平衡,中国不同省份的特征如何。

This research focuses on the production and consumption of animal foods in China, and uses the data related to animal husbandry and fisheries in the FAO database, as well as the data related to animal husbandry production and people’s consumption levels in China’s National Bureau of Statistics. The purpose is to describe the following questions: What is the international status of China’s animal food production and consumption levels, whether the consumption level and nutritional needs are balanced, and the characteristics of different provinces in China.

本项目开发了一套数据可视化的工具,例如FAO数据库均由该工具自动生成图片,开发者暂不对数据做结论,仅列举部分数据图表供参考https://tane-rs.github.io/meat_atlas/2019/12/30/CommodityBalances_Prod-Imp-Exp.html,特别说明,由于本项目使用github管理,可能境内部分地区不能看到图片或流畅使用。

This study also developed a set of automatic data visualization tools for the datasets of the FAO database. The data from FAO is generated to figures by this tool automatically, data developers don’t make any conclusion to data, and only demonstrate some parts of data figure in the results chapter of this document as follows for your reference. Notice:, As this project is managed in github, it may be out of service in parts of China mainland.


项目愿景 Project vision

随着不断积累的数据量和分析模型,我们期待在不久的将来,该项目成为一个可实时更新的在线交互平台,提供更好用的数据可视化和分析的应用工具,其数据图表将成为开源的跨行业通用的材料,任何符合其规则条件和使用协议的人及机构,均可以引用数据图表到他们的工作成果里发布。

目标人群为相关研究者,政策制定者,以及感兴趣或想探索相关行业数据的任何普通人,涉及行业包括并不限于农业,食物,动物,健康,环保,公益,经济,传媒,科普,学术科研 ……

With continuous accumulation volume of data and analysis model, we hope in the near future, it will be an online interactive platform that be dynamic and updated in real time, providing better data visualization and analysis application, its data figures will be open sourced as common materials in cross industry for anybody, who meet its rules and usage agreements, that anybody can cite data figures and to publish in their work.

Target audiences are related researcher, policy maker and common people anybody who are interested or want to explore the data related industries eg. agriculture, food, animal, health, environment, public welfare, economy, media, popular science, academic research. etc.

《China meat atlas 中国肉食数据图谱》当前版本为v1.1,仅实现线上工具自动发静态图。为升级数据版本和用户体验,预告v1.2版本将实现dashboard数据屏幕,有交互功能和更好视觉效果,后续版本将增加肉食与健康,环境等部分关系型图,以及尝试来自搜索和社交媒体的非结构化数据源。


词汇Glossary

动物产品:指的是用作食物的动物产品,但不包括蜂蜜,主要包括肉类、水产、蛋类、奶类、动物内脏和动物脂肪。

Animal Products: refers to animal products for food, but honey is not concerned, mainly includes Meat, Aquatic, Eggs, Milk , Offals and Animal fats.

肉类:指来自家禽和家畜的肉,主要包括猪肉、牛肉、羊肉和鸡肉。

Meat:refers to meat that comes from Livestock and Birds, mainly includes Pig meat (Pork), Bovine Meat (Cattle , Beef), Mutton & Goat Meat (Lamb, Sheep & Goat Meat), and Poultry Meat.

鱼类和海鲜(水产):主要包括淡水鱼、贝类、甲壳类、头足类、底层鱼、中上层鱼和其他海鱼。

Fish & Seafood (Aquatic): mainly include Freshwater Fish, Molluscs, Crustaceans, Cephalopods, Demersal Fish, Pelagic Fish, and Other Marine Fish.

中国大陆:所有的webpage上英文统一专属名词为 “China mainland”;为了与FAO专有名词标准保持一致,数据图谱上可以使用“China, mainland” 或者 “China mainland”。

China mainland: all web pages use China mainland for 中国大陆; in order to keep consistent with FAO proper noun standards, you can use “China, mainland” or “China mainland” in meat atlas digital figures.
